Nothing Special Chili
Boring bog standard chili (works for me) (details provided for
spudtater). Most of the unique details come from my sister. Although my habit of adding peppers and sweetcorn to my chilies was inherited from my Mum.
2 peppers, coarsely chopped
1 large red onion, coarsely chopped
3 cloves of garlic, finely chopped
500g minced beef
3 teaspoons mild chili powder (my sister told me to use fresh chilis, but I couldn't find any *sob*)
lots of tomato puree
2 tins chopped tomatoes
1 tin red kidney beans
1 tin pinto beans or borlotti
1 tin sweetcorn
1 OXO cube
1 tablespoon lemon juice
1 desertspoon drinking chocolate
1 pinch oregano
Fry the peppers, onion and garlic until softened. Add the mince and brown. Add the chili powder and tomato puree. Empty in the tins, draining the beans first. Crumble in the OXO cube, add the lemon juice, drinking chocolate and oregano. Leave to simmer for a long time.
Serve with flour tortillas and creme fraiche. Or cheese.
Tastes best on the second day.

I have made some very nice chili in the past which contained no beans whatsoever; just mince and vegetables, and served with plenty of rice.
